Tonight's one-pot meal is brought to you with a few ingredients that could all be cooked together and extras used in several ways. Mexican goodness in a pot :) and it feeds a crowd. Enjoy on a plate with all the fixings and scooped up with tortilla chips - no utensils needed! Enjoy in a tortilla as tacos, with all the fixings of course. ... Or make it a savory breakfast topped with an egg. 1. Brown 1lb or so of ground beef, turkey, chicken, or soy crumbles with a diced onion and minced garlic. Season with salt/pepper until cooked through and onion is soft. 2. Add oregano, paprika, cumin, chili powder, coriander, or whatever you have and mix well. 3. Add 1 c. fresh salsa, 2 c. enchilada sauce (I used green because that is what I had), 1 1/2 - 2 cups of water, 1 1/2 c. rice, 1 can black beans, and 1 can corn. Stir to combine. 4. Simmer for 30-40ish min or until rice is cooked through. 5. Top with cheese, olives, and cilantro (I did half because my husband doesn't like it but I like him ) 6. Serve with sour cream, chips, avocado, jalapenos, etc. You get the idea. I am going to freeze half for later but will enjoy the rest this weekend. Happy cooking!
