This is the soup I made (with Betsy). If you like potato soup, but don't want the carbs, THIS IS THE JAM!! I always use smoked paprika when I roast cauliflower, so I did also for the soup recipe. It was so good! AND easy. The oven was still hot from the bread, just slipped the cauliflower on in there when the bread was done (lowering the temperature according to the recipe here).
