Chocolate Eclair! A classic at its best. No fancy-pants, but when well executed, it’s a party! Takeaways:... -The choux paste must have a lot of butter (15%) -To keep the eclairs smooth, use a French star tip, instead of the regular star tip or round tip. It will create more lines and prevent the eclairs from cracking as they expand. -Brush the eclairs with a mix of clarified butter and dextrose, this will also prevent the eclairs from cracking as they expand. -Used unsweetened chocolate in your chocolate pastry cream custard. -Glaze your éclairs with a chocolate butter ganache instead of fondant.
