Meet the chefs of Pheasant Blue: Chef Steven Brooks A native of Germany, Brooks’ passion for cooking struck him unexpectedly during a school career day. He was ...invited to try his hand in the kitchen at a local hotel where he learned to prepare Parmesan risotto with pesto and poached garlic shrimp. A cook there saw Brooks’ potential and encouraged him to pursue a culinary career. In that one day, everything changed. I’m very grateful that he saw the bigger picture for me. Brooks went on to graduate from the Culinary Arts Academy in Switzerland. Upon graduation, he worked at the Hotel Blausee, then served as sous chef at the Althoff Grandhotel Schloss in Bensberg, Germany. In 2016, he moved to the United States and eventually settled in Atlanta where he joined the culinary team at One Eared Stag and then Restaurant Eugene. Brooks built his knowledge of Southeastern products during his time at One Eared Stag and now artistically mixes these ingredients with his global style. But more importantly, he is focused on building up his team in the kitchen, which he considers his family. This is a lifestyle, it’s not just a job. The cooks who have that fire and go hard have my respect, he says of his leadership style. He looks to his own mentor, Chef Daniele Scheitlin, to find both culinary inspiration and motivation for his management style in his current position and wants the same for his staff at Foxhall Resort. Today, Brooks melds modern and classic culinary techniques to surprise and delight his guests by adding his personal touch to Foxhall’s relaxed yet refined dining experience with his own inspired dishes. Diners can look forward to a new special dinner each month featuring multiple course meals paired with wines. When he’s not working, Brooks enjoys devouring a good book but most often finds himself caring for his staff. I always say, ‘my family is in the kitchen and the line cooks are my kids.’

Meet the chefs of Pheasant Blue: Chef Pinky From a young age, Chef Pinky has had a passion for ALL things food. Her love for cooking started with her southern r...oots. Family gatherings have always revolved around cooking. After her early years of exploring the kitchen, she would eventually turn her passion into a career. She's absorbed so many amazing techniques to prepare her for a world-class culinary career. While working at St. Cecilia under culinary genius, Chef Ford Fry whose restaurants include The Optimist and JCT Kitchen to name a few, Chef Pinky decided to venture off into a new field to focus on healthy cuisines. Once that decision had been made, The Piedmont at Buckhead recruited her after a patron of St. Cecilia quickly took note of her skills. After a few years, she then made the decision to run her company which offers her Personal Chef and Meal prep services. Her goal was to create healthy and affordable cuisines in the home. She was Sous chef at The Agency in Buckhead, formally known as the Public Kitchen and Bar. From catering, to food trucks, and working as Executive Chef of Hilton Hotels, and now Sous Chef of Foxhall Resort, Chef Pinky has done it all. She is also partnered with Orangetheory Fitness, offering meal prep. Her focus on special diets has been a natural progression. She has spent much time taking classes and reading materials related to diet and health. She has worked with clients who have had Multiple Food Allergies, Parkinson's Disease, Lung Cancer, Breast Cancer, Pancreatic Cancer, Gluten Free and Dairy Free, and Diabetes, to name a few. As she works with a client, she also educates them on healthy cooking. They soon start learning how to incorporate nutritious foods into everyday life. She also specializes in vegan and vegetarian cuisine since she is also a vegetarian. Her personal commitment to her business and clients is to continue to learn and study about the relationship of food, health, and nutrition. She finds these subjects fascinating, to say the least. You can taste her strong passion and commitment in the meals she prepares for her clients and Foxhall to let them know they can maintain vibrant health without skipping on 5-star taste.
