This is "MOTHER OF VINEGAR" or Mycoderma aceti produced in the GHI kitchen. M.O.V. is basically a form of cellulose and acetic acid bacteria that is created when you ferment an alcoholic liquid like wine (white wine in this case) this turns alcohol into acetic acid with the help of oxygen from the air. It is added to wine, cider, or other alcoholic liquids to produce vinegar. A big jar of vinegar starter might not be that exciting to most people but to us to be able to start off with something completely from scratch is pretty freaking awesome. To be able to create and control the flavor of so basic an ingredient just really takes us to a next level when you talk about cooking. Pretty sure nobody is going to get it but I feel like a kid on Christmas every time we pull something like this off at the kitchen.
