Hey Everyone, and Happy December! We are here again to introduce our vegetable of the month! Drum roll please.. CABBAGE! Cabbages are very popular in our fall and winter garden so why not showcase them. Cabbages comes in so many different forms and colors: red, purple, white, and green, smooth and rough, delicate and hardy. Based on the type of cabbage it can be eaten raw or cooked. These vegetables are full of nutrients and each color offers different types of nutrients and antioxidants. It is officially November, and what does that mean?! Thanksgiving is around the corner. But this Thanksgiving may be different for some of you, but what will not change is what we are expecting to be on the table. So, this months vegetable of the month is staple during Thanksgiving, and one of our favorites to pick out of the garden, Collard Greens! Collard greens are one of my favorite sides and you can prepare them using different appliances and different methods. They are a hardy vegetable full of nutrients, and will continue to produce even after harvesting.
