It ain’t Taco Tuesday, but these babies are so good, you’re going to want to eat them at least 2x a week. Looks like chicken, taste like chicken but it’s oyster mushrooms, battered and fried in grape seed oil. They are so good and would fool anyone. I find oyster mushrooms at my local Asian market. They are healthy and delicious ! What’s your favorite taco? I love mushroom and cauliflower tacos

Happy New Year Fam! How is 2021 treating you so far? I know it's been a minute, but if you know me personally, you know my love/hate affair with social media. Dinner was winner. Chinese stir fry + jasmine rice and frozen egg rolls. I made this using brown sauce from my local Chinese restaurant and I added ginger-garlic paste for extra flava . Take out made healthier.

How can you not enjoy the bounty of summer? My hardest decisions are should I eat watermelon, cherries, plums, or peaches for dinner. But, here’s a little dinner inspo.... Okra sauté with garden tomatoes, onions, black eye peas and some leftover stewed corn over jasmine rice. I don’t like to waste food, so this was me combining leftover dishes to make a new one. Dinner under 30 minutes. #eatmoplants
