Flowers...flowers...and more flowers at The Beautiful Restaurant

One of my favorite soul food restaurants was a place back in Atlanta called The Beautiful Restaurant. It was right off of Cascade Road and in the early to mid 9...0’s, it was open 24 hours a day and was especially packed on the weekends. Whenever I came home from college, it was one of the first places that I’d always go. Some of the busiest times were also every Sunday afternoon after church, when the line would be out the door and the cars would be parked all the way down the street. They had some of the best food and the late night breakfast was untouchable. I was always fascinated by their smothered chicken because the gravy was almost clear and had a golden hue to it. It didn’t look like normal chicken gravy that you would expect and I always wanted to master that. Now this was around 1993-94 and over the years, a lot of the cooks have changed and unfortunately some have passed on so I’m not sure if this dish is even available. But that was the inspiration the night that I made this. I didn’t necessarily get the look that I wanted but the flavors were definitely there. Next time I come to Atlanta, I’ve gotta make a stop.
