We add fresh Red Onion, (fresh Habanero by request,) and shredded cheddar cheese. When it comes out of the oven, we top it off with another drizzle of Lillies BBQ sauce, F...resh Basil, Romano, Oregano, and EVOO. We realize you are all shaken up, but we aren't done yet! But then we deviously disguise it all by topping it with pancetta (Italian bacon), Romano, and Fresh Oregano!!! It’s genius, I KNOW!!!! Why is a life full of such diabolical choices??? A salad or a cheeseburger... The fish or a big fat ribeye...... The vegetable medley or truffle french fries... Seriously, the choices we are faced with are so binary and they always seem to suck... Why can’t we just be offered the cauliflower as a side....but topped with Hershey’s syrup and whip cream every now and then? Well, that was the inspiration behind this weeks' weekly special, the "Prosciutto Parm di Rocket! I told the chefs that I want something that is equally as good for you as it is good to your taste buds....they said, challenge accepted! As always, we start with our imported 00 Italian flour. It’s not bleached, not enriched, and has a lower gluten content than anything found in the states...and by the way, it’s FREAKING AMAZING!!! Then we slather it with our San Marzano tomato sauce. The sauce is made of imported San Marzano tomatoes (widely regarded as the best tomatoes in the world), garlic, and fresh basil, and NOTHING else! When I say the sauce is amazing, don’t question me...I know what I’m talking about! Next, we pile on the shredded mozzarella, Bufala mozzarella, and Pecorino Romano... After cooking the pizza at 900 degrees for 90 seconds, we pull it out and add prosciutto di parma... without a doubt, the best prosciutto on the planet! At this point, the pie is 50/50 good and evil... so, to tip the scales... we add a heavy dose of fresh arugula all over the top! But don’t worry, we tame the greens with extra Virgin olive oil and parmigiana reggiano!!! Seriously, don’t let the arugula fool you, it’s delicious... and don’t let the rest taste of the rest of the ingredients fool you, it won’t even count as your cheat meal this week!!! Trust me, it’s the very best thing you will put in your mouth... it’s just an added benefit that it isn’t bad for you!

This pie is for the Blue Cheese lover, but if you don’t love Gorgonzola, don’t fret! *You can also order the Bacon and Mozz version (without the Blue cheese crumbles) and it’s just as amazing!!!

There’s only one thing in life that will never hurt you, never disappoint you, never let you down and never make you sad No, I’m not talking about family or a close friend no no no. There’s literally only one thing you can ALWAYS count on, and that’s BACON!!!... At V, we don’t just serve bacon, we serve PANCETTA!!! Bacon and pancetta are both made from pork bellies; the difference between them lies in how they're prepared and cured. ... Pancetta, the Italian version of bacon, is made by seasoning a pork belly side with salt and lots of pepper, curling it into a tight roll, and then wrapping it in a casing to hold the shape. It is fully cured and unsmoked, and while bacon or pancetta can be used interchangeably in most dishes, there is no mistaking when a chef cares enough to use the very best quality....and that is when you see pancetta in a recipe! Our Pancetta cured with Salt and Citterio's with a special blend of spices. We slice it thin and then slow roast it in the morning, and then it gets finished off on the Pizza as it cooks at 900 degrees.
